Gwyneth Paltrow is back at it with another unconventional health twist that’s got everyone talking. This time, she’s stirred up a storm with her latest culinary hack: replacing dairy with arugula. You read that right. During a lively cooking segment on the Today Show, the Goop Kitchen founder spilled the beans (or should we say, the greens) about her quirky swap. "If you want to avoid dairy," Paltrow, 53, shared with hosts Savannah Guthrie and Carson Daly, "one trick that I do is I dice up arugula and I put it in.”
As Paltrow demonstrated on TV, her arugula trick isn't just for show. She put it to the test while whipping up her signature gluten-free, grain-free turkey meatballs – using the greens instead of the parmesan cheese typically called for in the Goop Kitchen recipe. While the idea might leave some scratching their heads, Paltrow assured viewers, "It sounds weird, but it kind of adds a nice texture to it, and it's delicious.”
“When I don’t have milk for my pancake mix," one Instagram user joked, "I just add lawn clippings.”
While some fans are scratching their heads, others are embracing the idea. "Instead of adding grated parmigiano, you can absolutely add diced arugula," one supporter chimed in. "This will lighten the texture and add flavor and moisture."
Gwyneth is no stranger to culinary curveballs. Back in 2023, she shared her love for sipping soup at lunchtime on The Art Of Well Being Podcast, preferring "bone broth for a lot of the days" to fuel her workouts. And let’s not forget her quarantine cocktail confessions – two quinoa whiskey concoctions a night, anyone? As for indulgence, Paltrow has no qualms about it: "A friend came over [last night] and I ate a chocolate-covered Oreo," she told British Vogue in 2025, declaring, "I love it. I think it’s all about balance. Going too strongly in any direction is never good.”
